Here’s a super fast salad that you can pair with grilled meat (or a baked sweet potato) for a low-stress feast. Best of all, it’s based on leftovers and pantry items you’re likely to have on hand.

Chop cold leftover steamed broccoli*. Mince thinly sliced red onion. Toss in some roasted sunflower seeds. Salt to your taste, and mix with just enough homemade mayonnaise** to hold it together.

Num! This keeps well, but I tend to eat it right away.

*Best when slightly under-cooked. Mushy broccoli won’t work here.
